The custom of happy hour began with l’heure vert, or “green hour”, in 19th century Paris. The trend of a pre-dinner glass of absinthe led eventually to addiction and then a ban. Happy hour reemerged during Prohibition, as workers would stop at speakeasies before heading home. Today, Arlington, VA is among many cities that restrict happy hour specials, but of course the ritual continues.
